No-Bake Mini Pumpkin Cheese Ball Bites

As a busy Mama of a now preschooler, I am always looking for super easy class snacks.  An even tougher challenge is to make them look and taste delicious but without all the sugar.  I love everything about these no-bake mini pumpkin cheese ball bites. They aren’t packed with sugar, you can sub out organic or natural ingredients pretty easily, they are SUPER easy, and they are oh so cute.

Step 1:

In a medium size bowl, mix the cream cheese and the shredded cheese.  This step works best if you let the cream cheese softened.
I opted for the regular cream cheese since I am serving this to preschoolers but this recipe works with any kind of cream cheese.

Step 2:

Using a cookie scoop or spoon, scoop about 1 Tablespoon of mixture and roll into a ball.
Place on a parchment lined cookie sheet. Place it in the fridge for 10-15 minutes.

Step 3:

Finely crush the cheez-it crackers. Put them in a bowl or plate. Add one cheese ball at a time, roll around until it is well coated.

Step 4:

Cut up the celery into skinny ½ inch pieces. Place one stalk into a cheese ball.
Add a piece of parsley if you wish. I made some with and some without.

 

 

 

What’s Needed

 

  • 5 oz Garlic & Herb Cream Cheese (Regular works fine too)-softened
  • 1 Cup Finely Shredded Cheddar Cheese
  • 15-17 Ritz Crackers
  • Cheez-it Crackers (finely crushed)
  • Celery
  • Parsley

 

Directions

 

  1. In a medium size bowl, mix the cream cheese and the shredded cheese.
  2. Using a cookie scoop or spoon, scoop about 1 Tablespoon of mixture and roll into a ball. Place on a parchment lined cookie sheet.
  3. Place in fridge for about 10-15 minutes to firm them up just a bit.
  4. Take the finely crushed cheez-its and place in a bowl. Add one cheese ball and roll around in the mixture until well coated.
  5. Cut up the celery into skinny ½ inch pieces. Place one stalk into a cheese ball. Add a piece of parsley if you wish. I made some with and some without.
  6. Serve and Enjoy!!!
